Sun Dawen, from Chaozhou, Guangdong, is currently a professor of food and biological systems engineering at the University of Dublin, Ireland, and is the first Chinese lifelong professor in Ireland. He has conducted many years of scientific research in the field of frozen food and has published dozens of high-level SCI papers on food freezing technology. Especially in the past decade, Sun Dawen has used a series of emerging technologies such as power ultrasound to accelerate and strengthen the food freezing process and has achieved a series of world-leading original achievements, which has promoted the technical progress of food freezing. It is reported that the technology he developed, by promoting the formation of ice cores in the freezing process and controlling the size and distribution of ice crystals, so that they are fine and evenly distributed, minimize the damage of ice crystals to the texture of frozen food, improve the frozen food quality.
